Simple White CupcakeIngredients2 cups white sugar1 cup butter4 eggs1 tablespoon and 1 teaspoon vanilla extract3 cups all-purpose flour1 tablespoon and 1/2 teaspoon baking powder1 cup milk
DirectionsPreheat oven to 350 degrees F (175 degrees C). Line a muffin pan with paper liners. In a medium bowl, cream together the sugar and butter. Beat in the eggs, one at a time, then stir in the vanilla. Combine flour and baking powder, add to the creamed mixture and mix well. Finally stir in the milk until batter is smooth. Pour or spoon batter into the prepared pan. Bake cupcakes for 15 to 20 minutes. Cake is done when it springs back to the touch.
Cream Cheese FrostingIngredients2 (8 ounce) packages cream cheese, softened1/2 cup butter, softened2 cups sifted confectioners' sugar1 teaspoon vanilla extract
DirectionsIn a medium bowl, cream together the cream cheese and butter until creamy. Mix in the vanilla, then gradually stir in the confectioners' sugar. Store in the refrigerator after use.
I added a little red food coloring to the frosting to make it a light pink and topped it off with sugar pearls! Enjoy!
